A couple of months ago I saw a recipe for Caramelised Sprouts in a Gwyneth Paltrow cookbook. I couldn’t wait for the new season Brussels to come into the shops to try it.
Of course by now the book has gone back to the library so this is from memory!
Peels the sprouts, steam for 5 minutes. I don’t have a steamer so I stuck mine in the microwave for 5 minutes. Cut them into 1/2 and then you basically fry them in a little oil.
I remember she said not to shake the pan. They must be very brown but not burnt. Turn them over and let the rounded side go very brown.
Drizzle with olive oil , sprinkle with sea salt and add a squeeze of lemon.
I tried this in the oven instead of the hob and it was a pale imitation of how it should be.
